I found a recipe for veggie burgers that had a potato base. I found that intriguing and it sounded better than lentils or black beans. I substituted some spices and put in quinoa instead of bread crumbs to make them gluten-free.
They came out great! They paired well with the gluten-free buns I found at Trader Joe's and red onion, tomato, mustard, and lettuce. Here's the original recipe—
To go along with the quinoa/black beans tortilla chips, I made some
fresh salsa by blending together the fresh ingredients pictured to the left.
Turned out to be a fantastic vegan, gluten-free dinner!
