Chocolatey Raspberry Crumb Bars

This recipe is certainly not the most healthy thing I've ever baked....but they were pretty good. Very rich. Enjoy.










1 c. (2 sticks) butter or margarine, softened
2 c. flour
1/2 c. packed light brown sugra
1/4 tsp. salt
2 c. (12 oz.) semi-sweet choc. morsels, divided
1 can (14 oz.) sweetened condensed milk
1/2 c. chopped nuts (optional) (note: I hate nuts in my desserts, so I did not include them in my bars)
1/3 c. seedless raspberry jam

Preheat oven to 350 F. Grease 13x9 inch baking pan.

Beat butter in a large mixer bowl until creamy. Beat in flour, sugar, and salt until crumbly. With floured fingers, press 1 3/4 c. crumb mixture onto bottom of prepared baking pan; reserve remaining mixture.

Bake for 10-12 min. or until edges are golden brown.

Microwave 1 c. morsels and sweetened condensed milk in uncovered microwave-safe bowl on high for 1 min. Stir. Morsels may retain some of their original shape. If necessary, microwave at additional 10-15 second intervals, stirring just until morsels are melted. Spread over hot crust.

Stir nuts into reserved crumb mixture; sprinkle over chocolate layer. Drop teaspoonfuls of jam over crumb mixture. Sprinkle with remaining morsels.

Bake for 25-30 minutes or until center is set. Cool in pan on wire rack. Cut into bars.
